So in California, your coffee must now come with a warning. A cancer warning. Why? Because of a substance called acrylamide. It is a chemical that is formed during the roasting of the beans. Acrylamide is also formed when making toast. It is found in potato chips. And French fries. It can be found in cookies. It is found in just about any starchy food that is heated to higher temps.
Acrylamides are thought to be a carcinogen. So a judge in California has ruled that coffee needs to come with a cancer warning. Major chains will need to start carrying the warning. Even though there is no proof that coffee itself is harmful, if you visit California, you will see these warnings.
